RASPBERRY JAM

I always loved to cook, and I owe this to my mum, who’s an amazing chef and an amazing woman.

From when I started to create my own recipes, this one gave me the most satisfaction so far.

I still get surprised of some of this healthy and tasty recipes are actually really easy and quick to make.

Making your own jam gives me a feel of coziness and warmth and I think because I always think to my grandma in her kitchen, sterilising hundreds jars, cleaning and rattle off the fruit, worrying if there would be enough jam for everyone in the family!

This recipe is with chia seeds, which I truly love! But if you’re not a fan or you simply don’t have them at your fingertips, don’t worry, you don't need to add them as it will be yummy anyway!

Ingredients:

500gr raspberries

3tbsp. agave or maple syrup

juice of 1 lemon

2tbsp. chia seeds

Wash the raspberries and put them in a pan with the lemon juice. Start to cook them at a medium low temperature, being careful to stirring it frequently during all process. Bring to boil and start smash them. They should be cooked enough to smash them with a fork. At this point add 2 tablespoon of chia seeds. Again, you can skip this step or replace the chia seeds with two tablespoon of flaxseeds. Keep stirring and cook for 20 minutes or until you reach the consistence you prefer.

And then just spread it on bread, make toast with peanut butter, add some in the juices or make cakes!
