I hope you are all well and almost ready for the weekend!
I am feeling vibrant and excited! Since i've been back I have more energy and a good sprint. I have loads of ideas and things I want to do and a day with 24hours is not enough! Clearly travelling does good for me, I should do it more often (naughty smiley face)!
Anyway, hoping for a nice weather this weekend, Simon and me are organising a picnic at the park and we were putting down a list of nice food to bring with us.
If we’re making the right choices and everything works out well I will make a post of the perfect menu to bring to a picnic. :)
For now I know that I will bring for sure some avocado hummus I made this morning! It’s like the thousand time I make this (alternatively with the sun-dried tomatoes one!) and I can’t get enough! It’s so yummy and it works well with so many things or to eat just by itself – yes I’m guilty of charge!
If I come home after work and I just need a little snack to keep me going until dinner, I just eat a rice cracker with some of this hummus on top and I’m safe! Ok, let’s say two rice crackers. Maybe three, with some cherry tomatoes on top and that’s it! :)
I have some empty store-bought hummus boxes, which are perfect for my homemade one!
So here we go with the recipe!
(makes 200gr – 5minutes - vegan)
1 ripe avocado/60gr sun-dried tomatoes
1 can of drained and rinsed chickpeas
1 garlic clove
1tbsp olive oil
juice 1 lemon
salt to taste
Put all the ingredients in a bowl and blend them with an hand blender until it reach the right consistence (smooth and thick).
Conserve it in the fridge for 3 to 5 days and enjoy! :)
