COCONUT PANCAKES

Good Saturday you beautiful human beings!

Another day, another recipe!

And honestly, who doesn't love pancakes?

This morning we woke up and we were both really craving for pancakes and fresh fruits! We came downstairs and we started working on it!  One of the things I love the most is me, him, some Latino music in the background, cooking and put our ideas together on a sunny Saturday. I mean, I can’t ask for anything more!

 (makes 20 pancakes – takes 20minutes + 15minutes rest - vegan)

INGREDIENTS:

-275gr spelt flour

-360gr coconut milk

-2flax eggs (2tbsp grinded flax seeds – 6tbsp filtered water)

-3tbsp coconut oil

-1tbsp coconut sugar

-1tbsp baking powder

-1tsp salt

HOW TO:

Mix all the ingredients together in a bowl until you reached a mixture without lumps, cover it and let it rest in the fridge for 15 minutes. After this time, heat a non-stick pan and when it’s hot pour a scoop of your pancake mixture in the middle. Move around a little bit the pan so that the mixture creates the classic shape of pancake. After few minutes or when it starts to create little bubbles on top, turn it on the other side and finish to cook.

Voilat! You ready to taste this beauties with whatever you prefer, sweet or savoury work both good with this recipe! I had mine with some maple syrup and fresh fruits! 

It’s gonna be a beautiful day if you start it with some delicious food!

p.s.: you can  conserve the mixture in the fridge for the next day! I would suggest to consume it within two days though.
