Happy Friiiiiiiday people!

The sun is shining, the vibe is electric and the weekend is just around the corner!

Tonight I’m taking my brother bowling as he’s never been! I can’t wait to beat his a*s :) It’s gonna be fun!

In the meanwhile I keep going with my super healthy days before holidays and I have a crazy tasty salad for you (I just LOVE mango, what can I say?)!

mango and avocado salad

(makes 2 portions – takes 15 minutes – vegan)


- 60gr kale

- 30gr pistachios

- ½ mango

- ½ avocado

for condiment:

- ½ orange

- ½ lime

- 1tbsp olive oil

- 1tsp maple syrup

- 1tsp apple cider vinegar


First of all, toast the pistachios in a frying pan for 5 minutes. You want them crunchy at the right point. In the meanwhile, wash and de-steamed the kale, then break it in small leaves in a bowl. Slice vertically the mango and the avocado and add them to the bowl as well as the pistachios.

For the condiment of this salad I went for a citrus flavour: juice the orange and the lime and stir in the rest of the ingredients. Then simply pour it on top of your salad and voilà! Your light and tasty lunch is ready! :)
