Good morning lovely ones and happy Monday!
I haven’t been posting so much this past week because it has been a crappy week. There, I said it. I didn’t feel to smile so much and consequently I didn’t feel to update the blog for those days.
It’s nothing too bad, it’s mainly work related and sometimes I can be harsh on myself and I drag my self down for a few days. I felt frustrated and forgot about hope and positivity for a moment. Worst thing of all I don’t like myself when I’m like that, which makes me feel even more defeated.
At some point I decided to embrace this bad moment and just allow myself to feel down, eat shitty food and drink some wine. Olè!
But today is a new day and a new week so I’m gathering all the strength and positive attitude in me and I smile, knowing that I’ll find a way, like I always do! :)
Aaaaaanyway, new day, new recipe as well!!
I’m dreaming about being back in Bali and eating fresh mango in all his forms, juice, cubes, jams... I love mango so much: it’s really, reallygood for you, it helps your digestion, improves your immune system, it alkalize the whole body and, moreover, it helps clear the skin. Sorry, it taste like heaven, if in heaven is always summer and you’re laying on the beach, listening to the sounds of the ocean.
I never made mango jam so why not try it, and it’s so quick and easy to make that basically you have no excuses to not try it as well!!

(makes 600gr – takes 10 minutes – vegan)
- 2 ripe mangos
- 2tbsp chia seeds
- 2tbsp brown rice sugar (or other sweetener)
Peel the mangos and slice it to remove the stone and blend it with the brown rice sugar and chia seeds for a couple of minutes until smooth.
Can it be easier than this? :)
(Conserve in jars in the fridge for a couple of weeks.)
