Hola chicos! :)

another beautiful day in paradise! We just arrived at the beach of Xpu-Ha but we're in love already! The sand is white, the water is crystal clear and warm, we're lucky enough to be literally 10 seconds walking  from the water and it's also kinda quite, which might be due at the fact this is low season. We have our own kitchen in the house so we can cook our meals and everything is perfect! :)

Today I have for you a delicious vegetarian salad, that is really easy and quick to make, perfect for a busy week lunch! Try it and let me know what you think! :)

pear, walnuts and ricotta salad

(makes 2 servings – takes 15 minutes – vegetarian)


- 120gr salad leaves

- 35gr walnuts

- 1 pear

- 70gr salted ricotta

- 1tbsp olive oil

- 1tbsp honey

for condiment:

- 1 lime

- 2tbsp olive oil

- 1tbsp balsamic vinegar 

Wash the salad leaves well and break it in smaller leaves if necessary. Roughly chop the walnuts and toast them in a frying pan for 5 minutes. Once you’ve finished with the walnuts, move them to a bowl to cool down and in the same pan pour olive oil and honey and add the ricotta.


Fry the ricotta, stirring every now and then, for 5 minutes. 
At this point slice the pear in long, thin “fingers” and add all the ingredients to a bowl.

To prepare the condiment for this salad, simply mix together the juice of 1 lime, olive oil and balsamic vinegar.
