It’s Thursday, time for a new recipe!
How are you feeling about a good plate of pasta? With a good, creamy sauce that is a bit different from usual. Like pistachios pesto!!
It takes literally 5 minutes to make and it taste like how I imagine heaven to taste! :)
(makes 450gr pesto sauce, 2 portions – takes 20 minutes – vegan, gluten-free)
-250gr roasted pistachios (if not already roasted, do that yourself, slip them in the oven for 10 minutes, gas mark 4/180°C)
- 1 small lemon juice
-6 basil leaves
- 1 roughly chopped garlic clove
- 50ml olive oil
- 150ml filtered water
- salt & pepper to taste
- 200gr gluten-free pasta (I used RUMMO, which I really love!)
Put all the ingredients above (except the pasta of course!) in a blender and blend baby! You should get a creamy, nutty sauce. And what will happen is that you’re gonna taste it and you’re gonna LOVE it!
But I want you to stay focus because you’re gonna need it for the pasta! So let’s put it aside for now and let’s cook the pasta! I love RUMMO pasta, it’s really tasty and they’re doing gluten-free versions of each type!
To be honest I don’t need to eat gluten-free, meaning that I don’t have any physical condition that requires me to, but sometimes I prefer to eat a non diary meal, especially in the evening. It makes me feel less bloated and I sleep better.
