I’m gonna reveal this one thing today: in Italy, for breakfast, we eat sweet things, biscuits and milk, brioches, toast and jam and why not, cakes!

I wasn’t physically ready to a savoury breakfast. My body and my mind didn’t understand at first what having eggs and sausages, or tomatoes and beans and salad, in the morning, just after you wake up, could mean. I mean such strong flavours when I still don’t know in which world I am.

Eventually I got used to it. Of course!

And now I don’t understand how I could live without a good, big, savoury breakfast before.

This is one of my creations in collaboration with Simon :)

Sweet and savoury corn fritters!

(makes 4 – takes 20 mins – vegan)


-340gr organic sweet corn

-60gr flour

-2 flax eggs

-1tsp baking powder

-salt and pepper to taste

-1tbsp olive oil

-handful of spinach

-1/2 chopped onion

-1 finely chopped garlic clove

-small pinch of chilli flakes

-small pinch of coriander

-olive oil to fry

Ok, let’s roll up our sleeves and start! First of all, drain and rinse the sweet corn, put it in a bowl and add the chopped onion and garlic and blend into a chunky paste. Then pour in the flour, flax eggs, baking powder, salt, pepper and olive oil and mix using a wooden spoon all together until well combined.

Then finely cut the rest of the ingredients and add them into the mixture.

At this point you are ready for the cooking part: pour some olive oil in a pan and then spoon some of the mixture when it’s warm enough and cook each side for a couple of minutes.

Best to serve them warm! I served mine with some salad leaves, tomatoes and avocado!
