Hello my friends!
After few beautiful days of adventures (you can check it out on my Instagram or Facebook page!) today we're moving from our beautiful cabana on the beach to Hotel El Pez, where we're gonna spend 4 fancier days to celebrate Simon's birthday! YEEEEE :)
In the meanwhile I'm looking at the weather back in London and it doesn't make me feel nostalgic. Not one bit. But trying to look at the bright side of cold times, I'm looking forward to warm soups and teas at every time of the day! :)
Like this SUPER POWER GREEN SOUP! It's super tasty, healthy and detox! It will definitely be a must for when I come back!
(makes 5 portions – takes 35 minutes – vegan)
- 2 head of broccoli – 500gr
- 1 zucchini – 240gr
- 2 celery sticks – 150gr
- 2 garlic cloves
- 5gr ginger
- 3tbsp olive oil
- 1,4l water with 2tbsp of vegetable broth
- salt and pepper to taste
- 100gr spinach
- 1 chilli or a pinch of chilli flake
Wash well and roughly chop all the vegetables, peel and chop the garlic clove and the ginger, and add them all (not the spinach and the chilli) in a big sauce pan, together with the olive oil and cook at medium heat for 5 minutes.
At this point add the vegetable broth to the pan and let it boil, being careful to stir it every now and then. Once it’s boiling, reduce the heat to low and cover it with a lid. Leave it to cook for 20 minutes (the vegetables have to be soft enough to be blended).
Now transfer your soup to your high-speed blender or simply use an electric blender straight in the pan and smooth it all baby, until no lumps are left!

I like to always cook a couple of portions more, so I can freeze it and warm it up when I’m running out of food or I just want a tasty, good soup!
