ZUCCHINI & CARROTS NOODLES

It’s another day. The sun is not really shining today but hey! we can make a beautiful day out of it anyway!  I can help you do that by giving you delicious ideas for lunch/dinner/snack, for whenever you prefer! I have it for every occasion. When you have a belly full of GOOD food it makes everything better! Don’t you agree?

Well, there you go with one of those tasty recipes for you! 

zucchini noodles

(makes 2 portions – takes 20 minutes – vegan, gluten-free)   

tools needed: spiralizer

INGREDIENTS:

- 1 yellow zucchini

- 1 green zucchini

- 1 peeled carrot

- 1 garlic clove

- 2tbsp olive oil

- 1/2 lemon juice

- few cherry tomatoes and basil leaves to serve

HOW TO:

First of all get the veggies spiralized ready. Spiralize the two zucchini and the carrot and leave them aside. In a large fry pan pour the olive oil and add the garlic clove cooking at low heat for a while to make the oil pick up the garlic flavour. At this point add the zucchini and carrot and pour the lemon juice on them. Salt and pepper and fry everything at medium heat for 10 minutes.

Serve with fresh cherry tomatoes and basil. And voilat! Veggie noodles for ya! :)
